Chef Michael Chiarello of Bottega in Napa Valley (and season 1 of Top Chef Master’s) came to the kitchen in L’Ecole this morning to shoot a video for Nightline’s Platelist segment. I had the pleasure of assiting Chef and the ABC production team. He made his take on Green Eggs and Ham, which was a crispy fried poached egg with asparagus, mornay sauce, and pancetta. Then he showed us his Zinfandel pasta, which is noodles tossed with a reduced Zinfandel sauce, which has a delicious, sweet flavor. Zinfandel he makes at his vineyard of course. He was a pleasure to work with! I’ll post the video once it airs.
